No Bake Chunky Nut Bars

I might have mentioned it before, maybe not… or maybe once or twice… or maybe constantly… but I love eating. If I’m not doing it, I’m thinking about doing it and boy is all that thinking about food hungry work!  Perfect for that morning cuppa, or that afternoon cuppa, or after dinner… or really whenever you fancy one! Chunks of nuts mixed into sweet chewy dates and nut butter, these bars are heavenly.

Date and Coconut Bliss Balls

It’s no secret that I love snacking (potentially the biggest understatement I’ve made!), and I especially love all those handy energy bars like Bounce Balls and Nakd bars, no refined sugars, no nasties, but a whole lot of yum and perfect for on the go snacking. Unfortunately for me, I’m on a student budget and buying endless snacks becomes rather costly, so I decided to see if I could make my own and ended up with these date and coconut bliss balls, so called because each bite is a mouthful of pure bliss.

Fruity Breakfast Crumble

If someone told me that it’d be acceptable for me to eat crumble for breakfast, I’d laugh. But what if I told you that you actually could?! Traditionally made with a lot of butter and sugar, crumble doesn’t seem like the most sensible breakfast choice, but by making a few tweaks and removing the added sugar, it becomes a nutritious breakfast that feels deliciously indulgent.

Baked Cookie Dough Oatmeal

Some mornings a bowl of porridge just doesn’t cut it, and all you want is warm cookies (if this isn’t you, there’s something wrong!)  Giving into the cookie cravings, I decided to make chocolate chip cookie dough inspired baked oatmeal, and let me tell you, it was the gooiest, sqiudgiest warm cookie dough that I’ve ever eaten!

My overriding memory of fishcakes is my Dad making them for us as a treat, they were absolutely delicious, but they were fiddly, used so many ingredients and seemed to take all day to make.  Craving the taste of home comforts the other day, I decided to revisit my childhood favourite and put my own twist on it. (Dad approved!)
